Full Job Description

DEPARTMENT: Food & Beverage
POSITION: :Sous Chef
REPORTS TO: :Head Chef

JOB SUMMARY: :Oversee general kitchen operations as directed by the Head Chef. Carries out supervisory responsibilities in accordance with the organization’s policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.

ESSENTIAL JOB FUNCTIONS:

  • Supervise all cooks & stations in the kitchen to ensure products & dishes are to the standards set by the Head Chef
  • Expedite orders for assigned meal periods
  • Supervise stewards to ensure kitchen and equipment are kept clean & organized at all times
  • Ordering of all foodstuffs necessary to produce menu items
  • Perform month end inventory of all foodstuffs
  • Attend all departmental meetings as directed by Head Chef
  • Work directly with the Head Chef in menu development & creation of new dishes
  • Supervise & maintain hourly employee timesheets on a daily basis
  • Oversee & monitor food production for satellite outlets, including the Mercantile & the Tea Bar
  • Assist in scheduling of staff
  • Assist in disciplinary actions as needed
  • Assist in interviewing , hiring, & training new staff as needed


ESSENTIAL WORK SKILLS:
  • Excellent knife skills
  • Excellent knowledge of wide variety of cooking terms and techniques
  • Ability to lift and carry up to 30 pounds
  • Able to work standing for extended periods of time
  • Basic computer knowledge (email, excel, etc)
MINIMUM EDUCATION AND WORK EXPERIENCE:
  • Must have a High School diploma or equivalent
  • Ability to speak Spanish is preferable
  • Must have at least 5 years experience working in a commercial kitchen
