Position Summary:

Individual will prepare a la carte menu items and mise en place in a timely manner while maintaining the highest possible quality standards. Individual is responsible for preparing all products assigned to their work station by the Executive Chef as it relates to the P.M. Grill or Saute station. Works under the direction of the station Chef de Partie on a daily basis.

Job Duties:

  • Demonstrates a thorough working knowledge and execution of basic cookery including roasting, braising, sauting, poaching, and grilling with an emphasis on proper vegetable cookery.
  • Sets up and maintains a clean and organized station before, during and after service and at all times.
  • Prepares various vegetables, starches and garnishes to proper customer/menu specification when ordered.
  • Prepares all sides and accompanying garnishes for station menu items.
  • Responsible for any large batch vegetable production for a la carte and banquet functions as assigned by Chef.
  • Responsible for the proper rotation of all station products to include properly labeling and dating items daily.
  • Cleans and sanitizes the Grill station area continuously and at the end of every shift, to include once a week taking apart equipment and cleaning internal.
  • Aides in the preparation of employee meal daily.
  • Notifies Chef of any items that need to be ordered in advance.
  • Maintains a clean and professional appearance at all times.
  • Responsible for the cleanliness of the a la carte reach in coolers (items properly wrapped, labeled and organized on the shelves).
